It adds a citrusy character even when used as a bittering hop. This hop has such a strong character that it really should be reserved for American Ales. Commercial beers in which Cascade is prominent: Sierra Nevada Pale Ale, Anchor Liberty Ale. Substitutes: Centennial and Columbus have a similar aroma/flavor, but remember that they are considerably more bitter.
