US CENTENNIAL
Centennial (named CFJ-90 during development) has been called "Super Cascade". A high-alpha version of Cascade, but slightly rougher, this hop can be used for bittering anywhere you would use Cascade, but as an aroma/flavor hop, it can be quite intense due to the high essential oil content (can be as much as twice the typical oil content of Cascade). Commercial beers in which Centennial is prominent: Sierra Nevada Celebration Ale, Sierra Nevada Bigfoot Barleywine-style Ale. Substitutes: Just as Cascade would be the best substitute, don't forget to compensate for it's lower alpha acid content. The citrusy character of Columbus makes it a strong candidate for a Centennial substitute.
