CZECH SAAZ
One of the noble hops (in both schools of thought), it is the exclusive hop used in Pilsner Urquell. Very spicy, cinnamon-like, earthy, Saaz, is recommended for Bohemian Pilsners and German and American Lagers. U.S. - grown Saaz are not as refined as the Czech-grown, but more recent crop years have yielded respectable results. Substitutes: Tettnanger and Ultra are the closest, but Crystal might be a good substitute.
