Culturing a Sourdough Starter from Scratch

In this class Frank Petrarca will show you how to culture your very own sourdough starter from a mixture of flours & water. We’ll be harnessing wild yeast (bacteria) in the air and growing (culturing) it over a period of time. The initial culturing steps will take place in class and you will nurture your starter at home over the next few weeks to make it strong, healthy & ready to bake. Great Fermentations is a perfect place to culture a starter because of the high volume of yeast in the air from all the brewing & wine-making. Please note that no bread will be baked in this class but there will be plenty of sourdough samples. This class is geared towards people with some baking experience ready to learn the sourdough process. In addition to the initial culturing of the starter we will:





  • Review how and when to feed the starter between baking

  • Learn how to store the starter long-term when you are not baking

  • Learn how to revive the starter even if you think it is “dead”

  • Review hydration rates


What folks need to own:



  • Digital scale

  • Bread or high-gluten white flour

  • Whole wheat flour

  • Rye flour

  • 1-qt snap lock jar to store your starter

  • 1 qt glass measuring cup or bowl (bring to class
